In der Zwischenzeit die Zwiebeln würfeln und goldbraun braten. Den Bauch herausnehmen und die Leber in derselben Brühe ca. eine Minute kochen. Herausnehmen und zusammen mit dem Bauch in wolfgerechte Stücke schneiden. Fleisch und geröstete Zwiebeln 2mm wolfen. Mit den Gewürzen vermischen und mit so viel von der Kochbrühe auffüllen, dass eine breeiige Masse entsteht, dabei möglichst viel Fett von der Oberfläche mit abschöpfen. DIe Wurstmasse nach Wunsch pürieren, mit dem Wurstfüller in die Rinderdärme füllen und gut abbinden. Bei 85 Grad ca. eine Stunde brühen. Über Nacht abkühlen lassen und nach Wunsch für ein paar Stunden in den Kaltrauch hängen. Vor dem Anschnitt noch ca. zwei Tage im Kühlschrank durchziehen lassen. <br /></span></div></li></ul></div></div>
