Herausnehmen, den Saft zur Sauce geben (siehe unten). Entenbrüste mit der Hautseite nach unten in eine kalte Bratpfanne geben, erhitzen und das austretende Fett immer wieder abschöpfen, bis die Haut braun und knusprig ist.
